Pasta Nicoise Recipe

Ingredients

Small pasta shells

Tomatoes, quartered

Red bell pepper, sliced

Green beans, steamed

Black olives

Capers

Olive oil

White vinegar

each
Garlic cloves, chopped
Salt & pepper

Directions

  1. Cook the pasta in boiling, slightly salted water until al dente, 10 to 12 minutes.
  2. Drain well & rinse under cold water.
  3. Set aside.
  4. In a large bowl, mix together the pasta, bell pepper, tomatoes, beans; add the olives & capers.
  5. Mix the oil, vinegar, garlic, salt & pepper & pour over the pasta.
  6. Toss well just before serving.
